Home Cooking. Rye, Whole Wheat, Oatmeal, and Maple Syrup Bread.

Rye, Whole Wheat, Oatmeal, and Maple Syrup Bread Recipe: Sprouted Wheat Flour (1 cup); Rye Flour (1 cup); Whole Wheat Flour (1/2 cup); Oatmeal (1/2 cup); Bread Flour (1/2 cup); Flax Seed (1/4 cup);  brown sugar (2 tbs); maple syrup (1/4 cup); dry milk (1/4 cup); salt (1 tsp); egg (1 large); walnut oil (2 tbs); water (1 1/3 cup). Above ingredients added to the Panasonic Bread Bakery. Yeast (2 tsp) added to yeast hopper and the unit set for Whole Wheat Bread (Rapid) and started. Three hours later, the loaf of bread was removed and allowed to cool. This time the bread rose to the top, and was cooked all the way through. Next time want to try a version with more maple syrup and no brown sugar.

Saturday (21-April-2018) — New Jersey

Home Cooking. Rye, Oatmeal, and Maple Syrup Bread.

Whole Wheat & Oatmeal Bread Recipe: Oatmeal (1 cup); Rye Flour (1 cup); Sorghum (1/2 cup); Sprouted Wheat Flour (1 cup); Flax Seed (1/4 cup);  brown sugar (2 tbs); maple syrup (1 tbs); dry milk (1/4 cup); salt (2 tsp); egg (1 large); walnut oil (2 tbs); water (1 1/3 cup). Above ingredients added to the Panasonic Bread Bakery. Yeast (2 tsp) added to yeast hopper and the unit set for Whole Wheat Bread (Rapid) and started. Three hours later, the loaf of bread was removed and allowed to cool. This time the bread rose only 75%. Next time need to increase the sugar (maple syrup). The bread was very dense, and moist (almost gummy) in the center.


Monday (09-April-2018) — New Jersey

Early Springtime in New Jersey.

Colorful clouds at dawn, rye bread, chipping sparrows, and a local cat. When the cat showed up, the small birds disappeared.


Hearty Whole Wheat & Rye Bread Recipe: Whole Wheat Flour (1 cup); Sprouted Wheat Flour (1 cup); Rye Flour (1 cup); flax seed (1/4 cup); chia seed (1 tbs); caraway seed (1 tbs); fennel seed (1 tbs); anise seed (1 tbs), dill seed (1 tbs); brown sugar (2 tbs); dry milk (1/4 cup); salt (1 tsp); instant coffee (1 tbs); cocoa powder (1 tbs); egg (1 large); flax oil (2 tbs); water (1 1/3 cup); molasses (1/4 cup). Above ingredients minus the molasses added to Panasonic Bread Bakery. Yeast (2 tsp) added to yeast hopper and the unit set for Whole Wheat Bread (Rapid) and started. Once the unit started mixing the ingredients the molasses was slowly added. Three hours later, the loaf of bread was removed and allowed to cool.

Tuesday (27-March-2018) — New Jersey

Home Cooking. Whole Wheat & Oatmeal Bread.

Whole Wheat & Oatmeal Bread Recipe: Oatmeal (2/3 cup); Bread Flour (1 cup); Whole Wheat Flour (1 cup); Sprouted Wheat Flour (1 cup); Flax Seed (1/4 cup);  sugar (2 tbs); maple syrup (1 tbs); dry milk (1/4 cup); salt (2 tsp); egg (1 large); flax oil (1/4 cup); water (1 1/3 cup). Above ingredients added to the Panasonic Bread Bakery. Yeast (2 tsp) added to yeast hopper and the unit set for Whole Wheat Bread (Rapid) and started. Three hours later, the loaf of bread was removed and allowed to cool. This time the bread rose almost out of the cooker. Next time need to slow down the yeast fermentation process. (increase salt, decrease sugar, decrease yeast. I like this bread since it is not as dense and heavy as the Rye & Whole Wheat loaves.

Hearty Rye Bread Recipe: Rye Flour (1 cup); Bread Flour (1 cup); Whole Wheat Flour (1 cup); Sprouted Wheat Flour (1/2 cup); Flax Seed (1/4 cup); Chia Seed (1 tbs); Dill Seed (1 tbs); Anise Seed (1 tbs); Caraway Seed (1 tbs); Fennel Seed (1 tbs);  brown sugar (1 tbs); honey (2 tbs); dry milk (1/4 cup);  cocoa (1 tbs); instant coffee (1 tbs); salt (2 tsp); egg (1 large); flax oil (2 tbs); water (1 1/2 cup) molasses (1/4 cup). Above ingredients minus the molasses added to Panasonic Bread Bakery. Yeast (2 tsp) added to yeast hopper and the unit set for Whole Wheat Bread (Rapid) and started. Once the yeast had been added, and the mixer started the molasses was added. Three hours later, the loaf of bread was removed and allowed to cool.

The center was too moist (somewhat gummy). Probably due to using honey. Next time, I will cut back on the amount of water (or eliminate the honey).
